Ingredients
Fennel Grapefruit Delight
  • 1 ounce vodka
  • 1 ounce gin
  • 1 ounce fennel simple syrup
  • 4 ounces grapefruit juice
  • 1/4 cup club soda (to finish)
  • grapefruit slices (to garnish)
  • fennel fronds (to garnish)
Fennel Simple Syrup :
  • 1/2 cup sugar
  • 1/2 cup water
  • 3 tablespoons fennel seeds (toasted)
Directions
  • In a cocktail shaker add ice, vodka, gin, fennel simple syrup and grapefruit juice. Stir to combine with a cocktail spoon and strain into a Collins glass filled with ice. Top with club soda and garnish with a grapefruit slice and fennel fronds.
  • For the Fennel Simple Syrup: In a small saucepan add the sugar, water, and fennel seeds. Bring to a boil and reduce to a simmer. Cook until the sugar has dissolved, then remove from the heat and allow to cool to room temperature. Continue to infuse the fennel seeds in the simple syrup for another 24-48 hours. Strain syrup before making cocktail and discard fennel seeds.
